I've only played 1 of these games (and only 1 time through), so my recolection is weak. I recall a cook-type character that I recruited. Might I suggest Kasumi Tendo (or for more variety, Belldandy)__________________

Keep in mind I haven't played the game but:
101 The Shadowy Star
This could be chloe or Kirika from noir. Most ninjas would also fit but thats a bit boring.
74 The Peculiar Star
The puffball from Magic Knigth Rayheart? Kero-chan from Cardcaptor Sakura? They are prculiar creatures.
And here is me freeforming some starts without checking if they exist:
The Genius Star- clearly a mad scientist of some dsort, might I suggest girl genius or washuu?
The Burning Stark/The Dragon Star/The Phoenix Star- Mai from Mai Hime.
The psychopathic yet sexy blue haired killer robot star - You would think this star name is somewhat speific, but I can come up with several on the fly: KOSMOS, Ifurita, Ryoko (2 of them even, tenchi's and haruhi's), Miyu, and at this point I need to start thinking.
the very powerful star - nanoha
The insanly powerfull star - fate
the ludicriously powerfull star - hayate
the soldier star - souske sagera.
hmm, lets use some older animes:
the large star- the SDF-1 Macross could fullfill this one, but something like the Traverser fills it even better. (Solenoid flagship from the later gall force movies. ships shown to be kilometers long are insignifiant specs compared to it.) Or if old is more a criteria than large then Giant Robo, it's even in black and white.
the strong star - A-ko from project Ako
the inteligent star : B-Ko
the annoying star : C-ko
the destructive star : the Dir... Loveely Angels, I swear I wasn't going to use the other name. Please don't hurt me!
the compasionate star / the control freak star : Catty Nebulart (from gall force, not me.)

Of you're going to do this as serious (and not just over the top comedy) then you should limit the selection of character to those that might possibly fit in with the basic Ranma universe.
KOSMOS, for example, might be a bit hard to pull into the storyline. Same goes for, say Naruto, One Piece et al.
Also, be careful of pulling in characters with too much baggage. Again, for a serious story you want the story to mainly be about Ranma and Ryouga's fight and the other Stars of Destiny exist merely to supplement that plot (and the meta-plot of the Runic Cycle of Conflict effecting "Anime Earth"). In other words, I'd avoid Belldandy because her existence (and what it means) might overshadow the rest of the plot (this was the same reason we avoided Ah! Megami-sama in Hybrid Theory). Similarly, you might want to avoid Shaman King because of its metaphysical implications. Series like Noir face the opposite problem the character in it are just too LOW key.

That raises the question if it's going to be serious, slaptick or serious slapstick. Well there might be a few more catagories it might fit into.. and as I said I haven't played the games so I don't know the tone they set. Ranma is mostly a Comedy, But Ranma fanfiction has proven just how far the show can be stretched.

Suikoden is played mainly serious. There are some minor comedy bis throughout but it tends to be all about war, and the usual Japanese preachiness about war. Have you ever watched a Gundam series? Suikoden is basically exactly like that. Right down to "You start out on what should be the good guys side until you realise they are bad guys so you join the bad guys who it turns out are really good guys, except they are bad guys now and you have to make your own side to be the good guys and end war forever, with superior firepower if necessary oh and someone is trying to blow up the world!"

To be fair, the world itself was only in danger in III. But yeah, it's a lot like that.
Fairly serious with a healthy side of slapstick would be the ideal tone.
The tricky bit is restricting such a war to East Asia alone. Japan, the Koreas, and China... a situation like that, how do you keep everyone else out?

I don't think we want this to become a discussion about modern geopolitics.
Let us instead say that politics in the Ranma 1/2 universe do not exactly mirror our own and go with whatever works for the story.

Well, since this seems to be a martial arts/ancient weapons war, it's likely the US wouldn't get involved, since they'd assume the JSDF could put the kibosh on it if they wanted to.
IF it's even remotely modern, the US has bigger fish to fry and more on its plate.

You could figure that there are other apocalypsi taking the attention elsewhere. You might get a few people (street fighter/KoF characters, for example) who incarnate as one of the 108 stars and show up, but the majority of the foreign powers get fobbed off with occasonal passing references to things like "The recent difficulties with Shinra" and "The Metal Gear incident".
