True, if I was changed into a girl, I'd freak out, be affected by female hormones to a certain extend, but aside from extenuating circumstances, I do believe that I would still be attracted to females.
So Ranma getting stuck as a girl doesn't affect his way of thinking. And in his own mind, he would still see himself as male.
