Cinnamon. Lots of cinnamon. It's probably the main reason why us Hispanics live long and healthy lives despite being so addicted to our sweets - it has all the right health benefits to counteract our fat- and carb-heavy diets, and we certainly use more than enough to do the trick in our deserts. Not only that, it also helps sweeten things without using as much sugar.
Filling: probably Apples. Prepared much the same way as apple pie filling, but not as soft. Also: prickly pears, or as we like to call them here, tuna.
It would also probably be fried so the tortilla shell becomes like San Antonio's infamous Puffy Tacos.

In addition to being liberally dusted with cinnamon, it will probably be drizzled with chocolate icing. We fucking love our chocolate.
