It would create the category page as a list of pages with that category tag, which I suspect isn't what you're looking for. Somebody (knowing how these things end up, that "somebody" is probably me) would still have to go in to each page and copy the email address from it to add it to an email-directory page (much like I have to copy all the callsigns over to the callsigns page manually).

Unfortunately the "sort key" of a category does not change its name in the category page
