As a "for instance", while Jeph Antilles does change gender (he's learned to control the process *somewhat*, but is still prone to unwanted transformation), he retains his weight and height (the former is, as these processes go, only mildly redestributed), and medical exams have shown "shadow structures" of the other gender are present (whichever gender he's in at the moment), mostly minor anatomical "oddities" of where organs are placed and how muscles and tendons are grouped.
