House elves are based on brownies and similar creatures of myth who are happy to do work around the house for humans, but must leave if they are thanked or acknowledged in any but the most roundabout way (except for one or two "safe" ways, such as leaving out a saucer of milk). Rowling just tweaked them for her purposes. But you would think Hermione would have noticed the parallels with the folk tales and understood at least partially...
