I think the point to this week's recipe is the mushrooms, not the starch... so, whatever works for you!

In that case, using the equivalent of 57 grams of dried pasta/person should be just fine as it would give the mushrooms more chance to shine.

This week's radio recipe: braised beef "poutine" (which bears about as much resemblance to actual poutine as a breadstick bears to a bagel).

I had never heard of pupusas before today - but apparently Ottawa has had a Pupusa Festival for over a decade.
This week's radio recipe is for this Salvadoran treat. Cheesy green pepper pupusa--

World Jollof Rice Day was this week. (I didn't know, either.) This week's radio recipes mark that event.

Thanks.
...That first recipe lists "1 sweet potato" twice, several lines apart, and doesn't do anything but reference "all the vegetables" collectively. Looks like a typo, unless you really like sweet potatoes.-- Bob

The ingredient list does mention carrot, zucchini, and onion, so I assume those and the sweet potato are "all the vegetables".
(I stopped reading at "zucchini". That vegetable and I have an agreement: it only triggers my allergic reaction if I eat it.)--

No, I meant it appears to have listed the one required sweet potato in two different places.-- Bob

Erm, Bob? It looks like you double posted your complaint about sweet potatoes being listed twice in one recipe's ingredient list.
Is this like the Internet rule that a complaint about spelling or grammar errors will contain some of its own?

This week: dandelion jelly.
Start by making dandelion tea... which the recipe also tells you how to make.

Wait, do you actually have to keep the water for the tea boiling for 12-24 hours? Because that right there is a deal killer as far as I'm concerned.
Also, I wonder how it would work with a sugar substitute? You'd almost certainly have to use Pomona's Universal Pectin as other brands require sugar to gel properly.

The recipe does assume some previous knowledge, yes. I read that as "start with boiling water and let steep for 12-24 hours".
As for sugar substitute, I couldn't say. Around here, "jelly" contains sugar; "fruit spread" might or might not; and this was billed as "jelly".

Culinary experimentation of the week: Peanutburgers
I was mucking about and decided to have some fun.
Coleslaw recipe (quantities guesstimated):
* One pack Wegmans Asian Slaw Mix
* Three shallots, diced
* One cup Light or Vegan Mayonnaise
* 1/4 cup Soy Sauce
* 1/8 cup Rice Wine Vinegar
* 1 tsp Sugar
* 1 tsp Pepper
* 1 tsp Garlic Powder
* 1 tsp Five-Spice powder
* 1 tbsp Thai Peanut Sauce
* 1/4 tsp Chili Oil
Mix well. Leave in fridge for 3-4 hours to set.
I worked with pre-made vegan "chicken" patties, already breaded, but if you want to make your own (or use real chicken) go ahead.
Just cooked those, dredged 'em in a good Thai peanut sauce, then serve 'em on a hamburger roll with a good scoop of the slaw and maybe some colby-jack or provolone cheese.
Sucrose Octanitrate.
Proof positive that with sufficient motivation, you can make anything explode.
