"Like to cook" - the second helping

Last week's radio recipe is Korean barbecue tofu stir-fry. What makes it "Korean barbecue" is the bottled sauce.

Vegan if you use the specified bottled sauce, from this place.

Last week's radio recipes are wartime sweets: Overseas fruit bars and Bermuda Cake

Something for when you're ready to go beyond Cantonese or Szechwan: Here's a recipe for Hakka style Chili Chicken. (Bob, you'd probably want to leave out the optional green Thai chili peppers.)

Last week's radio recipes (multiple - perhaps they're making up for lost time over the pandemic) are things that the youngsters can make with the grown-ups:
  • Hummus
  • Homemade pita chips
  • All purpose Moroccan spice
  • Frittata
  • Date and cocoa energy balls
  • Wholewheat oatmeal and apple pancakes
  • Savoury pancakes
  • Blueberry syrup

Last week's radio recipe is a one-pot meal: pot roast. Contains wine.

Since this is a slow-cooking meal, the recommendation is to use a less-tender (and less-expensive) cut of meat and let it tenderize itself in the pot.

Huh. A lot more elaborate than my usual pot roast recipe, especially where liquid is concerned -- I normally start with only 3/4 cup of wine, not enough to submerge most of the meat. (I still get two or more cups of gravy out of it when I'm done, though.) I'll have to try adding a couple of things from it to my recipe, though, such as the garlic, rosemary and bay leaf.

Slightly off-topic, but still likely of interest: NASA offers foodies, boffins $500,000 to find ways for astronauts to make their own dinners on the Moon, Mars

You have to live in the USA to qualify for the cash prizes. There's a parallel initiative lead by the CSA, for which you have to live in Canada to qualify for the cash prizes - link in the same article.

Last week's radio recipe is chocolate eclairs. Separate recipes for the choux pastry and the filling.

It's close to sugaring season again... Here's a recipe book where every recipe calls for maple syrup. Most of these are stereotypical French-Canadian cooking; the ones that aren't are the ones that have either soba or ricotta.
  • Soba noodle salad with soy sauce and maple syrup (serves 4)
  • Glazed scallops with maple syrup (serves 4)
  • Maple-glazed pork tenderloin (serves 4)
  • Beef and stout stew with maple syrup (serves 6)
  • Maple BBQ sauce
  • Maple-glazed Easter buns (12 buns)
  • Rhubarb and maple clafoutis (serves 8)
  • Crispy ricotta and maple syrup rolls (8 rolls)
  • Mini apple and maple syrup tart (12 tartlets)
  • Apple and ricotta fritter swith maple syrup (approximately 24 fritters)
  • Rice pudding with maple syrup (serves 6)

Last week's radio recipe is Mexican-style pepper and tomato salsa.

Note that the above link says "Mexican-style", not "Mexican".

Why? Because we don't want the Mexicans as upset as the Italians are. New York Times’ Tomato Carbonara Recipe (Rightly) Causes International Incident

Contains honey.

It's Norwuz - Persian New year. Here's an article about the celebrations - scroll down to "Traditional dishes" (near the end) for two recipes.

Wait - they're both images. So... you should still read the article, for context.

Something that should be in everybody's kitchen, if only because I want to see the business survive the pandemic... Partridgeberry sauce.

Most of the rest of the world calls partridgeberry "ligonberry". This particular sauce is made from wild berries, which IMHO have more flavour than the farmed berries IKEA offers with their meatball dinners.

It's good on other cuts of beef, too, not just hamburger.

(Prices on that site are in Canadian dollars. At the moment, four US dollars will get you five Canadian dollars, exchange fees not included. Of course, there's taxes and shipping to worry about...)

Next up, more blueberry preserves.
