Last week's radio recipe is chocolate eclairs. Separate recipes for the choux pastry and the filling.



It's close to sugaring season again... Here's a recipe book where every recipe calls for maple syrup. Most of these are stereotypical French-Canadian cooking; the ones that aren't are the ones that have either soba or ricotta.
  • Soba noodle salad with soy sauce and maple syrup (serves 4)
  • Glazed scallops with maple syrup (serves 4)
  • Maple-glazed pork tenderloin (serves 4)
  • Beef and stout stew with maple syrup (serves 6)
  • Maple BBQ sauce
  • Maple-glazed Easter buns (12 buns)
  • Rhubarb and maple clafoutis (serves 8)
  • Crispy ricotta and maple syrup rolls (8 rolls)
  • Mini apple and maple syrup tart (12 tartlets)
  • Apple and ricotta fritter swith maple syrup (approximately 24 fritters)
  • Rice pudding with maple syrup (serves 6)
